Grind size controls how fast water extracts flavour. Finer grounds have more surface area and extract faster, so they suit short brews (espresso); coarser grounds extract slower and suit long steeps (French press, cold brew). Using the wrong size is the most common cause of bitter (over-extracted) or sour (under-extracted) coffee — fix the grind before changing anything else.
